Grilled Salmon with Roasted Vegetables

Ingredients

4 servings

  • 4 salmon fillets
  • 1 cup mixed vegetables (broccoli, carrots, bell peppers)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  • Preheat the grill to medium-high heat.
  • Drizzle salmon fillets with olive oil and season with salt and pepper.
  • Grill salmon for 8-10 minutes per side or until cooked through.
  • Toss vegetables with olive oil, salt, and pepper.
  • Roast vegetables at 400°F for 20-25 minutes or until tender-crisp.

  • Fat: 15-20g
  • Carbohydrates: 20-25g
  • Fibre: 5g
  • Protein: 30-35g
