Dark Chocolate Ricotta Mousse with Espresso and Raspberries

Dark chocolate ricotta mousse with raspberries and toasted hazelnuts for diabetics

National Dessert Day deserves a dessert that tastes like one.

This dark chocolate ricotta mousse is thick, creamy and deeply chocolatey, with espresso intensifying the cocoa without making the finished dessert taste like a cup of coffee.

Ricotta provides the familiar richness of cheesecake, while Greek yogurt contributes additional protein and a subtle tang. Fresh raspberries bring brightness, and toasted hazelnuts add the crisp finish that turns a simple blended dessert into something worth lingering over.

The mousse takes approximately five minutes to prepare. A short period in the refrigerator gives it an even thicker, more luxurious texture.

Ingredients

  • 3/4 cup part-skim ricotta cheese

  • 3/4 cup plain, unsweetened 2% Greek yogurt

  • 2 tablespoons unsweetened cocoa powder

  • 1 teaspoon instant espresso powder

  • 1 teaspoon hot water

  • 1/5 teaspoon pure vanilla extract

  • Pinch of fine salt

  • Optional: stevia, monk fruit or another preferred noncaloric sweetener, to taste

  • 1/2 cup fresh raspberries

  • 2 tablespoons unsalted toasted hazelnuts, roughly chopped

Instructions

  1. Prepare the espresso. Stir the espresso powder into one teaspoon of hot water until dissolved. Allow it to cool for a minute.

  2. Blend the mousse. Add the ricotta, Greek yogurt, cocoa powder, dissolved espresso, vanilla and salt to a mini food processor or blender.

Blend for 45 to 60 seconds, stopping to scrape down the sides as needed. Continue until the ricotta is completely smooth and the mixture looks thick and glossy.

  3. Adjust the sweetness. Taste the mousse. Add a small amount of preferred noncaloric sweetener if desired, then blend briefly.

  4. Divide the mousse. Spoon the mixture evenly into two small dessert glasses, ramekins or shallow bowls.

  5. Chill. Serve immediately for a softer mousse, or cover and refrigerate for approximately 30 minutes for a thicker texture.

  6. Finish the desserts. Top each serving with ¼ cup raspberries and one tablespoon of toasted hazelnuts immediately before serving.

The Details That Make This Dessert Exceptional

Why This Chocolate Ricotta Mousse Tastes So Rich

This chocolate ricotta mousse uses cocoa, espresso and vanilla to create depth without relying on melted chocolate or a large quantity of sugar.

Espresso makes chocolate taste more intense. The small amount used here supports the cocoa rather than turning the dessert into coffee mousse.

Raspberries cut through the creamy base, while toasted hazelnuts add the crunch and roasted flavor often associated with premium chocolate desserts.

Choose a creamy ricotta

Ricotta texture varies considerably among brands. Choose a smooth, fresh product rather than one that appears dry or grainy.

If liquid has collected in the container, drain it before measuring. Excess moisture can make the mousse thinner.

Blend long enough

The mousse should not retain visible ricotta curds.

A full minute of blending transforms the mixture from chocolate-flavored ricotta into a smooth dessert. Scrape down the container at least once so no cocoa remains along the sides.

Use unsweetened cocoa powder

Natural or Dutch-process cocoa will work.

Natural cocoa has a fruitier, slightly sharper flavor. Dutch-process cocoa is darker, smoother and less acidic. Either one creates a flavorful mousse without added sugar.

Dissolve the espresso powder

Adding dry espresso powder directly can leave bitter granules in the mousse.

Dissolving it in one teaspoon of hot water distributes the flavor evenly without thinning the mixture significantly.

Toast the hazelnuts

Toasting brings out the nuts’ aroma and improves their texture.

Purchased toasted hazelnuts are the easiest option. To toast them at home, place the chopped nuts in a dry skillet over medium-low heat for two to three minutes, stirring frequently.

Add the toppings just before serving

Raspberries release juice as they sit, and hazelnuts soften when exposed to moisture.

Keep both toppings separate until the mousse is ready to serve.

What to Serve with It

The mousse can be served on its own as dessert or a substantial snack.

For a simple dessert course, consider serving it with:

  • Unsweetened coffee

  • Espresso or decaffeinated espresso

  • Unsweetened mint tea

  • Additional fresh raspberries

  • A few sliced strawberries

  • Sparkling water with lemon

These accompaniments are not included in the nutrition calculation.

Ingredient Alternatives

Don’t have ricotta?

Use blended cottage cheese. The flavor will be slightly saltier, and the sodium value can increase.

Don’t have Greek yogurt?

Use plain skyr or another thick, unsweetened, high-protein yogurt.

Avoiding caffeine?

Use decaffeinated instant espresso powder or omit it.

Don’t have raspberries?

Use sliced strawberries, blackberries or a measured portion of blueberries.

Don’t eat hazelnuts?

Use toasted almonds, pecans or walnuts.

Need a nut-free dessert?

Replace the hazelnuts with one tablespoon of roasted pumpkin seeds per serving.

Want stronger chocolate flavor?

Add one additional teaspoon of cocoa powder. Taste before adding more sweetener.

Want a softer mousse?

Blend in one tablespoon of unsweetened milk.

Make-Ahead Shortcut

Prepare and portion the mousse up to one day ahead.

Cover each serving and refrigerate it without the raspberries or hazelnuts. Add the toppings shortly before serving.

Premeasure the hazelnuts into two small containers to keep the portions consistent.

Storage

Refrigerate the mousse in covered containers for up to two days.

Store the raspberries and hazelnuts separately. Stir the mousse gently if a small amount of liquid appears on the surface.

Don't freeze it. Ricotta and Greek yogurt can separate and become grainy after thawing.

Why This Can Support a Diabetes-Conscious Eating Plan

This dessert contains no added sugar when prepared with an optional noncaloric sweetener. Ricotta and Greek yogurt provide protein, while raspberries and hazelnuts contribute fiber.

No added sugar does not mean carbohydrate-free. Dairy products and raspberries contain naturally occurring carbohydrate.

The FDA and American Diabetes Association recommend reviewing serving size and total carbohydrate rather than judging a food by its sugar content alone.

The recipe is divided into two servings before the toppings are added. Individual carbohydrate needs and glucose responses still vary according to medications, activity, meal timing and the rest of the meal.

Frequently Asked Questions about Diabetes-Friendly Chocolate Mousse

Does the mousse taste like ricotta?

The ricotta contributes a mild cheesecake-like flavor. Cocoa, espresso and vanilla are the dominant flavors once the mixture is blended thoroughly.

Can I make this without a blender?

Yes, although the texture will be less smooth. Press the ricotta through a fine-mesh strainer, then whisk it with the remaining ingredients.

Is espresso powder the same as ground coffee?

No. Instant espresso powder dissolves in liquid. Ground coffee will leave a gritty texture.

Is the recipe very sweet?

The mousse is dark and chocolate-forward rather than intensely sweet. Add a preferred noncaloric sweetener to suit individual taste.

Can I use regular chocolate?

Melted dark chocolate can be added, although it contributes additional calories, saturated fat, carbohydrate and possibly added sugar.

Can I double the recipe?

Yes. A standard blender or food processor will handle a double batch more easily than a single batch.

Why did my mousse become thin?

The ricotta or yogurt likely contained excess liquid. Drain visible liquid before measuring and refrigerate the mousse for 30 minutes before serving.
