This dark chocolate almond bark uses deeply flavored 85%t chocolate with toasted almonds, pumpkin seeds and cacao nibs. Every bite is crisp, nutty and intense, so a small piece feels complete.

The recipe takes about 10 minutes of active work and keeps well in the refrigerator for a ready-to-enjoy snack or dessert.

Ingredients

  • 6 ounces 85% dark chocolate, finely chopped

  • 1/2 cup unsalted roasted almonds, coarsely chopped

  • 1/3 cup unsalted roasted pumpkin seeds

  • 2 tablespoons cacao nibs

  • Small pinch of flaky salt, optional

Instructions

1. Prepare the pan. Line a small baking sheet or flat plate with parchment paper.

2. Melt the chocolate. Place the chopped chocolate in a dry microwave-safe bowl. Microwave for 20 seconds at a time, stirring thoroughly after each interval, until almost melted. Continue stirring until smooth. Keep every utensil dry because a drop of water can make chocolate seize.

3. Add the crunch. Stir half of the almonds, pumpkin seeds and cacao nibs into the chocolate.

4. Spread and finish. Spread the mixture into a roughly 8-by-6-inch rectangle. Scatter the remaining nuts, seeds and cacao nibs unevenly over the surface. Add the optional flaky salt.

5. Chill and portion. Refrigerate for about 30 minutes, until firm. Cut or break into eight similar pieces. Store cold until ready to serve.

The Details That Make This Recipe Exceptional

Why This Dark Chocolate Almond Bark Feels Satisfying

This dark chocolate almond bark delivers strong cocoa flavor and three kinds of crunch. The nuts and seeds interrupt the solid chocolate, creating a slower, more interesting bite than a plain square of chocolate.

Read the chocolate label

Cocoa percentage does not tell the entire nutrition story. Compare total carbohydrate, added sugar and serving size among 85% bars.

Chop the chocolate evenly

Small, similar pieces melt at the same rate and reduce the chance of overheating.

Stop heating before every piece disappears

Residual heat finishes the melting as you stir. Overheated chocolate can become thick or grainy.

Toast for flavor

If the almonds and pumpkin seeds are raw, toast them separately in a dry skillet until fragrant, then cool completely before using.

Portion before storing

Separate the bark into eight pieces as soon as it sets. A visible serving removes guesswork later.

What to Serve with It

The following are optional serving ideas and are not included in the core recipe or its nutrition estimate:

  • Fresh raspberries or strawberries

  • Unsweetened coffee or tea

  • A small serving of plain Greek yogurt

  • A few orange segments if they fit the snack plan

Ingredient Alternatives

No pumpkin seeds?

Use an equal amount of chopped walnuts or pistachios.

No cacao nibs?

Use one additional tablespoon each of almonds and pumpkin seeds.

Need nut-free?

Replace the almonds with roasted sunflower seeds. Confirm that the chocolate is suitable for the allergy.

Prefer less bitterness?

Use 80 percent dark chocolate and compare the added sugar on the label. The nutrition values will change.

Want a warmer flavor?

Add a pinch of cinnamon or instant espresso powder as a pantry seasoning.

Make-Ahead Shortcut

Prepare the bark up to two weeks ahead. Once firm, place the pieces in a covered container with parchment between layers. Keeping the portions separate prevents the bark from fusing together.

Storage and Reheating

Refrigerate in a covered container for up to two weeks. For the cleanest texture, let one piece stand at room temperature for about five minutes before eating. Freeze for up to two months and thaw in the refrigerator; a pale surface bloom can appear, which is harmless and affects appearance more than flavor.

Why This Can Support a Diabetes-Conscious Meal

This recipe treats chocolate as a measured pleasure. Nuts and seeds contribute fiber, protein and unsaturated fat, while the one-ounce serving keeps the amount of chocolate defined. Dark chocolate still contains carbohydrate, added sugar, calories and saturated fat. Check the label and consider the bark within the full meal or snack rather than assuming a high cocoa percentage makes portions irrelevant.

The American Diabetes Association presents the Diabetes Plate as a flexible framework that combines non-starchy vegetables, protein and quality carbohydrate. Review the ADA meal-planning guidance.

Frequently Asked Questions

Is 85 percent chocolate sugar-free?

No. Most 85 percent chocolate contains some added sugar. Read the Nutrition Facts label rather than relying on the cocoa percentage.

Can I melt chocolate on the stove?

Yes. Use a completely dry heatproof bowl over barely simmering water and keep the bowl above the water.

Why did my chocolate become grainy?

It was probably overheated or exposed to water. Use short heating intervals and dry equipment.

Do I need to temper the chocolate?

No. Chilling creates a firm bark suitable for home storage. It will not have the same room-temperature gloss and snap as professionally tempered chocolate

.

Can I double the recipe?

Yes. Use a larger lined sheet pan and maintain the same thickness so the bark is easy to portion.
