Ingredients

  • 8 ounces dry chickpea rotini or penne

  • 1 pound boneless, skinless chicken breast, sliced into bite-sized strips

  • 1/2 teaspoon freshly ground black pepper

  • 1 teaspoon smoked paprika, divided

  • 1 tablespoon extra-virgin olive oil

  • 1 12-ounce jar roasted red peppers, drained

  • 1 cup 2% cottage cheese

  • 2 garlic cloves, minced

  • 4 cups loosely packed baby spinach

  • 1/4 cup finely grated Parmesan

  • 1 tablespoon fresh lemon juice

  • 1/3 cup reserved pasta water, as needed

Choose roasted peppers without added sugar when available.

Instructions

  1. Boil the water. Bring a large pot of water to a boil. Prepare the chickpea pasta according to the package directions.

Begin checking it one or two minutes before the stated cooking time because chickpea pasta can soften quickly.

  2. Reserve the pasta water. Before draining, reserve ⅓ cup of the cooking water. Drain the pasta without rinsing it.

  3. Season the chicken. Pat the chicken dry. Season it with the black pepper and ½ teaspoon smoked paprika.

  4. Cook the chicken. Heat the olive oil in a large skillet over medium-high heat.

Add the chicken in a single layer. Cook for approximately six to eight minutes, turning occasionally, until browned and the thickest pieces reach 165°F.

Transfer the chicken to a clean plate.

  5. Blend the sauce. Add the drained roasted peppers, cottage cheese and remaining ½ teaspoon smoked paprika to a blender. Blend until completely smooth.

  6. Cook the garlic. Reduce the skillet heat to medium-low. Add the garlic and cook for approximately 30 seconds, stirring constantly.

  7. Warm the sauce. Pour the roasted pepper sauce into the skillet. Add two tablespoons of reserved pasta water and stir.

Warm gently for approximately two minutes. Do not allow the sauce to boil vigorously.

  8. Add the spinach. Add the spinach in two batches, stirring until it is just wilted.

  9. Combine the pasta and chicken. Add the drained pasta and cooked chicken to the skillet. Fold everything together until evenly coated. Add additional pasta water one tablespoon at a time if the sauce is thicker than preferred.

  10. Finish the dish. Stir in the Parmesan and lemon juice. Remove the skillet from the heat and divide the pasta evenly among four bowls.

Chicken must reach an internal temperature of 165°F. Reheated leftovers should also reach 165°F.

The Details That Make This Pasta Exceptional

Why This Chickpea Pasta with Chicken Tastes So Creamy

This chickpea pasta with chicken uses blended cottage cheese to turn roasted red peppers into a smooth, protein-rich sauce.

Smoked paprika deepens the roasted flavor, while Parmesan adds savoriness and lemon prevents the finished pasta from tasting heavy.

Blending the sauce thoroughly is essential. Once the cottage-cheese curds disappear, the texture becomes velvety rather than grainy.

Watch the chickpea pasta carefully

Chickpea pasta can move from firm to overly soft more quickly than wheat pasta.

Begin tasting it before the package’s suggested cooking time ends. Drain it while it still has a pleasantly firm center.

Do not rinse the pasta

Rinsing removes surface starch that helps the sauce cling to the pasta.

Drain it well and transfer it directly to the sauce.

Reserve the pasta water

Chickpea pasta continues absorbing liquid after draining.

Reserved pasta water allows the sauce to be loosened gradually without diluting its flavor.

Blend the cottage cheese completely

Blend for at least 45 seconds and scrape down the container once.

The sauce should look uniformly coral-colored with no visible white curds.

Keep the heat gentle

High heat can cause a dairy-based sauce to separate.

Use medium-low heat after adding the blended cottage cheese. Warm the sauce without bringing it to a vigorous boil.

Add the lemon last

Lemon brightens the roasted peppers and balances the Parmesan.

Adding it after the sauce has finished cooking preserves its freshness and reduces the chance of the dairy separating.

What to Serve with It

The recipe includes chicken, chickpea pasta and spinach and can be served as a complete meal.

For additional vegetables, consider:

  • Roasted broccoli

  • Grilled zucchini

  • Steamed green beans

  • A cucumber and tomato salad

  • Roasted cauliflower

  • Arugula dressed with lemon

  • Broccolini with garlic

These sides are not included in the main recipe or nutrition calculation.

Ingredient Alternatives

Don’t have chickpea pasta?

Use another legume-based pasta, such as lentil pasta.

Whole-grain pasta also works, although the protein, fiber and carbohydrate values will change.

Don’t have chicken breast?

Use cooked turkey breast or boneless, skinless chicken thighs.

Don’t have cottage cheese?

Use plain ricotta. The sauce will contain less protein and more fat, depending on the product.

Want a vegetarian version?

Omit the chicken and add one 15-ounce can of rinsed chickpeas.

This changes the carbohydrate and protein values.

Don’t have spinach?

Use finely chopped kale. Add it several minutes earlier so it has time to soften.

Want more heat?

Add ¼ teaspoon crushed red pepper flakes with the garlic.

Don’t have smoked paprika?

Use sweet paprika. The sauce will have less smoky depth.

Need a dairy-free version?

Use an unsweetened, higher-protein plant-based yogurt and a dairy-free Parmesan alternative. Heat the sauce very gently.

Make-Ahead Shortcut

Blend the roasted-pepper sauce up to two days ahead and refrigerate it in a covered container.

The chicken can be sliced and seasoned one day ahead. Store it separately from the sauce and vegetables.

Cook the chickpea pasta shortly before serving for the best texture.

Storage and Reheating

Refrigerate leftovers in covered containers for up to three days.

Chickpea pasta absorbs sauce during storage. Add one or two tablespoons of water before reheating.

Reheat gently in a covered skillet or in the microwave in short intervals. Heat the chicken and pasta to 165°F.

Why This Can Support a Diabetes-Conscious Meal

This recipe combines a measured portion of chickpea pasta with chicken, cottage cheese and spinach.

Chickpea pasta still contains carbohydrate. Its legume base does not make it carbohydrate-free. Check the Nutrition Facts label because carbohydrate, fiber and protein vary among brands.

The FDA recommends comparing serving size, total carbohydrate, fiber, added sugar and sodium on packaged-food labels.

Each serving contains approximately 38 grams of total carbohydrate. Individual portions can be adjusted according to glucose response, medication, activity and nutritional needs.

Frequently Asked Questions

Does chickpea pasta taste like regular pasta?

It has a mild legume flavor and slightly firmer texture. The roasted-pepper sauce, chicken and Parmesan make the difference less noticeable.

Is chickpea pasta low in carbohydrate?

Not necessarily. It often contains a similar amount of total carbohydrate to conventional pasta, although it generally provides more protein and fiber.

Always compare labels.

Can I use precooked chicken?

Yes. Add approximately three cups of cooked chicken with the drained pasta and heat it to 165°F.

Why did my sauce separate?

The skillet was likely too hot. Keep the heat at medium-low and avoid boiling the sauce after adding cottage cheese.

Can I use an immersion blender?

Yes. Blend the peppers and cottage cheese in a tall, narrow container until completely smooth.

Can I freeze the sauce?

Yes. Freeze the blended sauce without pasta, spinach or chicken for up to one month. Thaw it overnight in the refrigerator and warm it gently.

Can I double the recipe?

Yes. Cook the chicken in batches and use a Dutch oven or extra-large skillet for combining the ingredients.
