Diabetes-Friendly Recipe: Cheryl's Homemade Garlic Dijon Aioli Dip
Aioli is synonymous with mayonnaise (store-bought or homemade) that is flavored generously with garlic. While there are healthier versions of mayonnaise on the market, such as ones made with olive oil rather than eggs, the best version is one made at home. This recipe is an example of that. It's made with kefir.
As seen in Medical News Today, a recent study found that participants who had kefir had significantly lower fasting blood sugar levels than those who consumed the conventionally fermented milk. Kefir is also a great source of probiotics for people with Diabetes.
- ½ cup of Kefir
- 1 tsp minced garlic
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ¼ tsp salt
- ¼ tsp pepper
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped green onions (scallions)
Put all of your ingredients in a medium-size bowl and whisk until well combined.
Serve with your favorite fresh vegetables or as a sauce with your grilled meat!
